all of that dough that wasn't used immediately is now trash. You'd be better off with a cold water base and letting it ferment in a cooler. Proof does nice and fluffy until you realize you can only use so much before it overproofs
ive gotta say that i made this recipe and did it justice and i just dont like this style of pizza lol. give me a tavern style thin crust any day
