Once you can smell the aroma of cooked spices add the steamed rice ( remove the star anise , cinnamon, cardamom)Add a dash of vinegar or juice of half a lemon .Mix everything well making sure the rice don’t get mushy. More like tossing and flipping the pan 🙂Now add beetroot julienne, some chopped coriander.Note : you can also add chopped green onions but I was out .Enjoy ! threewildcrows 2 years ago So like a pilau or biryani? Vegetarian fried rice
Ingredients
2 cups basmati rice
Spices
Green cardamom 2 pods
One stick cinnamon (1/2 inch)
One star anise
Mustard seeds
Cumin seeds
Salt to taste
Coriander powder
Roasted cumin powder
Chilli flakes
Green chillies slit ( 2 nos)
Vegetables
Roughly 1 cup
Carrots julienne
Capsicum julienne
Onion sliced
Beans chopped
Peas boiled
Beat root julienne
Fried potato fries
Cabbage thinly sliced
Broccoli florets (blanched)
Steps:
Boil / steam rice with peas, cardamom pods, star anise, cinnamon stick and some salt to taste.
Once they look almost done strain them out.
In a big skillet add some vegetable oil and add a tsp of mustard seeds, once they start to sputter add a tsp of cumin seeds.
Now add sliced onion , green chilies and sauté for a minute.
Now add all the remaining vegetables but not beetroot.
