Eggplant Parmigiana is the perfect comfort food. Made with tomato sauce and cheese goes well as main as well as starter.

Ingredients:

1 kg eggplant
3 full tablespoons of flour
800 ml tomato passata
a small bunch of basil
200 g mozzarella cheese
150 g parmesan cheese
2 big cloves of garlic
150 g onion
6 tablespoons of olive oil
2 teaspoon of salt
1/2 teaspoon of dried basil
1/2 teaspoon of black pepper
