This was my first time trying to make pulled pork and it turned out well in a texture way but literally all I can taste is fat.
Ingredients used were: Bone in pork shoulder blade, two large onions cut into slices, 1/4 cup apple cider vinegar and a spice rub. That’s it.
As you can see there is one piece of fat that I cut off post cooking but I trimmed the rest pre cooking.

So the pork shoulder has a lot of fat. When you slow cook it renders into that juice (combined with the vinegar and onion water). That juice is mostly fat which is why it tastes like fat.
I’ve used Dr pepper as the liquid to add some sweetness and when I agree I only use some of the liquid at the end to keep it moist (unless I was doing like carnitas)

Are you at altitude? Seems like it evaporated quicker than you thought it would. Also did you trim your meat before putting it in

It taste like fat because it is fat. Pull the meat out and shred it. Heat a skillet on medium-high, add a couple tablespoons of the fat/liquid. Fry the meat until it’s a lil crispy. Add desired seasonings like BBQ sauce if your going for that flavor or if you want a carnitas/Mexican style add some cumin, coriander, chipotle, jalapeno blend to it. serve on a nice bun with pickles and coleslaw for southern BBQ, or pack it in a taco with grilled onions, tomatoes, lettuce, and crema for carnitas. If youre feeling adventurous, wrap it like a burrito with all your goodies inside including some cheese and fry it on all sides in some more of the fat… You’ll thank me later 🍻✌️
Edit: you said “blade”, how much did that weigh? Did you use a a blade steak or a small picnic shoulder? Blade steaks are best hot and fast vs low and slow. The amount of fat leads me to believe you used a small pork picnic/butt. Please post weight and the cut of meat.
