
Made for a good side dish to my scrambled eggs, especially with some ketchup. Before the keto police say the negligible amount of instant mashed potato flakes is not keto, sure, but it makes it taste better. Leave it out if you want.
Ingredients:
1 cup broccoli slaw
1 egg
1/2 cup mozzarella cheese
1 tbsp of instant mashed potato flakes (optional, but makes it taste better)
Seasonings to taste – I used garlic powder and pepper. You do you
Instructions:
1. Mix ingredients together in a bowl
2. Chop the mixture up a bit with a fork to reduce the size of the slaw pieces
3. Place a thin amount in your mini waffle or larger waffle maker and close lid
4. Once steam stops rising (i.e. most of the liquid removed), open waffle maker and flip to brown other side
5. Let cook for another couple of minutes, take out, and place on a wire rack to cool and crisp up
5. Repeat with rest of mix and enjoy!

5. Let cook for another couple of minutes, take out, and place on a wire rack to cool and crisp up

I think I’m gonna experiment with these tomorrow so I can surprise my partner for breakfast this week!
I think your waffle maker must be broke because you do not need to flip waffles.

I had to google broccoli slaw not come across it before – would it have the dressing on when you use it here or just the veg that would go into the slaw?
