Amazing! I wanted to say those suppli were 'unctuous' but I looked up the real meaning (see link)…rather, I wanted to say they would be the deep-fried treat of choice for me! I suspect that if you fried the rice balls at the right temperature, they wouldn't absorb a lot of oil….

This looks a lot like our family recipe of arancini. My grandparents moved from Sicilia to the Netherlands but some recipes stayed in the family. I try to preserve them.
My uncle adds to the rice Lemon zest and nutmeg and another chees called "galbanino", the difference is remarkable, trying to believe they are even more delicious
What a great recipe dish, i could honestly make a meal of these instead of just a snack, they look so deloicious and filling.
Is the ragu just tomato sauce on top of the rice?

Had Suppli in Rome. My family fell in love with them. Love the film, but wish you would list the proportion of ingredients in the explanation.
Very disappointed. Proportion of ingredients is not listed so I bought the book. Sadly, the recipe is not in the book. If you are going to highlight the recipe, I would think the ingredient proportions would be listed here or at least be in the Pasta Grannies cookbook.

One of my favorites. Whenever I make a risotto, I always make extra portions. The next day, I take the leftovers out of the fridge and make suppli out of them. The best ones are from my roasted red pepper risotto, but I've done it with asparagus and mushroom risotto as well. Turns out the when you bread and fry things, they always turn out great.
Have enjoyed binge watching your interesting and sweet videos during lockdown! Someone asked for the recipe in one of the comments and I added what I thought it would be based on "eye-balling" what she did in the video. Feel free to correct.
