Hi everyone,
I hope everyone is doing well and having a good day..I come with a concern and a question…my kimchi started to taste really sour and it’s new. what do I do to get rid of the sour taste? I’ve tried eating the kimchi as a side with my bibim naengmyeon but can’t enjoy the taste..this is not my first time tasting kimchi, it’s just that this batch I bought is surprisingly really sour and don’t know what to do to save it. Please help🥺

    Tbh if it’s super sour, I’d just cook with it. Make a nice kimchi jiggae

    You can’t make it less sour. Kimchee gets more sour as it ages.

    On a brighter note, sour kimchee is the best kind of kimchee to stir fry or make into a soup. Make some kimchee chigae or kimchee fried rice.

    That’s the thing with kimchi – every family, every region, every brand has their own recipe/taste. Some taste more sour, others more spicy, others more fishy, others a little sweeter, the list goes on. If it’s too sour for your taste, do a kimchi-chigae as already been suggested. Or kimchi jeon.
