Awesome little cart and plan! That alone is a good sign you’re headed the right way.
I was mostly looking for bottlenecks in your process like pivoting from left of espresso machine to right of espresso machine, but you got a good right-to-left flow. Efficient use of space, too!

I designed mine with a GS3 I split the power into two 20 amp circuits and extension cords so I diden’t need a generator. I can also use a remote generator if I need to.

I run a cart with a gs3, the only bottle neck for you us going to be speed. You can probably serve at max 100 people per hour if you include non coffee drinks…..
