To begin, start by peeling and deveining the shrimp. Make a careful incision along the back to remove the black thread. Remember to keep the shrimp shells and heads, as we’ll be using them later to enhance the flavor of our dish.
Chop half an onion and mince some garlic to prepare the aromatic base for our risotto.
Boil the shrimp shells and heads in water for approximately 20 minutes. To infuse additional flavor, add half of the minced garlic and consider incorporating thyme if desired.
Strain the shrimp-infused broth to create a flavorful base for our risotto.
In a separate pot, sauté the remaining chopped onions over low heat, combining them with olive oil and the rest of the minced garlic.
Now, let’s move on to the main event! Pour the shrimp broth into the pot, maintaining a rice-to-water ratio of about 1:5. For instance, for 100 grams of rice, use 500ml of shrimp broth.
While the risotto is simmering, let’s pan-fry the peeled shrimp. Sprinkle some black pepper for an extra kick, and fry the shrimp until they turn a beautiful golden brown, which usually takes around 3 minutes.
After approximately 20 minutes of cooking, when the rice is perfectly done, add a touch of tomato sauce, pepper, and cheese to suit your taste.
Scoop the flavorful risotto into a bowl, delicately fold in the pan-fried shrimp, and enhance the dish with a dollop of butter, fresh coriander, and a slice of zesty lemon.
