    Salsa Verde (this will be used to make chile verde):

    1lb tomatillos

    1lb poblanos

    1 jalapeno, whole

    2 serranos whole

    4 jalapenos, seeds removed

    1 medium onion

    4 garlic cloves

    1/2 cup of cilantro, chopped

    1 tbsp cumin

    1tsp salt

    All fresh ingredients except cilantro roasted together in oven. Transferred to blender and pureed with cilantro, cumin, and salt.

    Salsa quemada (this is our everyday salsa for chips, tacos, whatever):

    5 medium Roma tomatoes

    5 medium tomatillos

    1 jalapeno

    2 serranos

    1/4 quarter onion

    2 garlic cloves

    1/3 cup of cilantro, chopped

    1 tsp salt

    All fresh ingredients except cilantro roasted together in oven. Transferred to blender and pureed with cilantro and salt.
