Shami Kabab
Ingredients
½ kg Mutton/Beef
6-8 Garlic Cloves
1 inc Ginger
1 tbsp Oil
1 Onion finely chopped
1 Potato cut in small cubes
1 cup Chickpea Lentil
Salt to taste
1 tbsp Chicken Powder
4-5 cup Water
6-8 Dry Red Chilli
10-12 Green Chilli
8-10 Black Pepper
4-6 Cloves
2 Bay Leaves
1 tsp Black Cumin Seed
1 tsp White Cumin Seed
2 White Cardamom
1 Black Cardamom
1 inc Cinnamon Stick
½ bunch of Fresh Coriander finely chopped
½ bunch of Mint Leaves finely chopped
1 tsp Cubeb Powder
1 Egg
Oil for frying
Instructions
Take a large bowl and soak chickpeas lentils for 1 hour.
Heat oil in a large pot and add all the ingredients in it. Except water, lentils, egg, mint leaves and fresh coriander. Cook until the meat change its color. Then add water and soaked lentils in it. Take a boil on high flame. Then cook on a medium flame until the lentils and meats tender. Dry all the remaining water on high heat. Now instantly mash it with potato masher. Now add egg, mint leaves and coriander leaves in it and mix well.
How to make Shami Kebab Divide the mixture into 10 to 15 equal portions and make balls. Flatten them with your palm and make kebabs. Then place them on a plate.
Heat oil for frying in a pan. When the oil is hot enough, drop the kebabs into the hot oil. Cook on medium heat until golden on both sides.
When they are golden fried, transfer them to a plate lined with kitchen tissues.
Serve Shami Kebab hot with mint chutney or ketchup.
