1 cups fresh basil leaves
3 cloves garlic
50g pistachio (or any nuts e.g. pine nuts, walnuts…)
1/3 cup grated Parmesan cheese
1/2 lemon

_________________________
2 table spoon Pesto
100g pasta (any kinds of pasta)
150g clams in shell
Salt and pepper to taste
📢 IMPORTANT NOTICE
1. Basil tends to oxidize (turn brown) when heated up or left exposed to air, add some lemon juice to change it’s pH, or blanch the basil leaves to use heat to kills off the decomposing enzymes, that can keep your pesto stay green longer.
2. Store your pesto in airtight container in refrigerator for up to 1 week. Or freeze in ice cube trays for up to 6 months.
2. Soak clams in salt water (+ 1 hours) to spit out sand before use.
3. Different kinds of pasta have different cooking time, cook your pasta according to the instructions on the package.
4. Don’t eat any clams that are closed, just pick it up from your pan and through away.

Just a week it’s fully grown, good to cut off & make pesto. Sweet basil has a milder flavor than Thai basil (Taiwan basil) Taiwan basil – jiu ceng ta, has widely used in Asian cuisine Today’s sweet basil pesto is a Western cuisine on pasta
You can also use Taiwan basil to make Pesto as you want 3 clove garlic Parmesan cheese Olive oil I use Pistachio You can use any kind of nuts Lemon Just press the garlic and you can peel it easily Tradition pesto uses pine nuts, but today I use pistachios Juice 1/2 lemon

Pick off the leaves Boil some water Add 1/2 tea spoon baking soda Blanch the basil Pick it up when it becomes soft Drain Small amount of ingredients so I use a small blender Add garlic Add pistachio Add blanched basil leaves Add Parmesan cheese Add olive oil Add lemon juice

You can use any kind of pasta When the water boils, add the pasta After cooking, remove and drain the water Soak clams in salt water and spit out sand before use First add some oil and fry the clams When it’s almost open, add the pasta and stir-fry Before all the clams open
