I’ve never cooked a Turkey in my life, as usually I’m just cooking for myself and sometimes my daughter (who doesn’t care much for meat). Have always wanted to cook one though, so as sad as it sounds I got a frozen bird on special after Xmas and after having a terrible week finally got around it cooking it, just for myself and no company (dont worry, the leftovers will not be wasted!).
The breast meat was the most tender I’ve ever had (pulled it at 150f), I could actually cut it with a fork. The drum/thigh was still a little underdone for my liking though (especially on the bottom side face down to the roasting tray) so if I make it again I might actually seperate the leg and put it in 20% earlier than the rest of the bird.
I could taste the butter/flour too much in the gravy and not enough turkey/savoury coming through so I think I technically messed something up there (maybe I just got the portions wrong).
One thing that confused me is the skin was very crispy out of the oven, but by the time I served was not nearly as crispy (it was sitting uncovered on counter for 20 mins). I don’t recall having that problem so much with chicken.
Overall, a super easy recipe to follow and not much harder than making a roast chicken!

Fwiw I managed to salvage my gravy by reducing it more, more salt, more pepper and a little msg… went from bland to something I was resisting the temptation to drink by the cup.
You wasted valuable stomach space on green beans instead of Turkey.
