Seasoned the left hand side with Meat Church Holy Cow and the right with a teriyaki marinade.

Teri was very good but exactly what you’d expect it to be. Holy Cow is amazing. Peppery and delicious.

Smoked for six hours at 165, chilled in the fridge, then blasted with a torch and served with olive oil, lemon, and a local sambal sauce for dipping.

Perfectly tender though still a tad rubbery straight off the grill. It “relaxes” a ton when chilled.
