I have this kimchi I bought about 3-4 weeks ago. The best before date is late April. The back of it says eat within 14 days of opening. I opened it the day I got it (obviously 😋) but haven’t yet finished it. I’m thinking of throwing it into some kimchi jigae.

Would you still eat this kimchi?

    Kimchi can theoretically last forever. Just look for mold spores. If you don’t see any, it’s good to eat

  3. I made kimchi last May, I ate some a few months ago and I still have some and will eat it in May…1 yr old.

  4. I routinely put out old kimchi from the fridge to room temperature so it’ll over-ferment.

    That way it’ll make good kimchi jigae, or samgyupsal topping, and many many cooked kimchi recepes.

    as long as it doesn’t have molds, Kimchi can be eaten at any form.

    Man, I need to put my big boy pants on and try the kimchi in my fridge (same brand as pictured). But I’ll say that your bravery is making me feel weak when I see my reflection now lol. I see a “best by date” and if it’s past that I’m saddened that i didn’t consume it faster and saddened I waisted money by throwing it away.

    I’m aware “best before” and “best by” can mean different things. I guess it was the spoiled milk that caused my “past food date” avoidance. I still have trouble with that spoiled memory.

    Yes fermented foods are different but when you’re not completely aware of the ins and outs of it all it can be intimidating to a Canadian that’s not familiar with it.

    But all that goodness in kimchi “I want in” I love Napa cabbage and bok choy is my favourite green.

    Sorry my brain went overboard with this reply but I’ll leave it and reply anyway haha.

    I buy mine in the gallon jugs from H Mart and they last 5-6 months and I eat it no issue.

    Did you buy this at Costco? My 96 yo grandpa brought over the same thing and was like— “it’s not for me” still good and it’s well past the “sell by date”

    I’d Just cook with it 😀 fermented stuff tend to be fine outside expiration requirement (which was really for supermarket to throw out the stock)

    It’s a best before date, not use by date. There’s a big difference…it’s at it’s best before that date bug can still be eaten well after.
    Use by date is more specific for foods that can spoil like meats etc.
    That’s what a chef told me so I tend to believe it.

    Yes! I have one from 2 months lol I like having 2 in the fridge. One new one is old.
