Cacio e Pepe Eggs by #InaGarten (from Go-To-Dinners)
Ingredients:
– 12 extra large eggs
– 1 cup whole milk
– Kosher salt and freshly ground black pepper
– 4 Tbsp unsalted butter
– 2/3 cup freshly grated pecorino cheese (plus extra for serving)
– 4-5 slices toasted country bread

Directions:
1. Whisk the eggs, milk, and 2 teaspoons of salt together in a medium bowl.
2. Put the butter in a cold large (12 inch) sauté pan and place it over medium/low heat. Allow the butter to melt almost completely, then add the egg mixture.
3. Cook over medium/low for 8-10 minutes, stirring occasionally with a rubber spatula. When the eggs start to make small clumps, stir them more rapidly, scraping the bottom of the pan, and cook for another 4-5 minutes.
4. When the eggs are almost cooked, turn off the heat and continue to stir the eggs rapidly until they’re soft and custardy. (When you pull the spatula through the eggs, they will still be soft but they will stay in place.)
5. Stir in the Pecorino and 2 teaspoons of pepper.
6. Spoon the eggs over toasted bread and serve hot sprinkled with extra Pecorino.
7. YUM.

Creamy and custardy and if you cook it at a high temperature gets tough doctor yes thank you just let it sit for a minute until it starts to set and then you start pushing it around with that yeah just like that okay once it sort of sets a little bit

You just keep stirring it and you end up with really fluffy big clouds of scrambled eggs you doing trouble’s here see it’s starting to get like really custardy okay as opposed to like you know like something you can cut I I definitely do a scramble yes are you even turning it

Down more yeah are you impatient when you have three children waiting for breakfast yeah you’re really impatient I turn off the heat for a minute when it’s just about there maybe another 30 seconds pearo oh wow the Heat is off and it’s still going it’s still cooking isn’t it

I think a lot of people like cook them fully and then what happens is you walk away to get the plates and it’s overcooked I’ve pretend been schooled this is pretend cooking school oh that’s delicious not bad little salt isn’t that interesting oh my gosh that is so good isn’t that

  6. Actually, you can cook scrambled eggs on a high heat in a newer, non-stick pan. You just got to be super quick about it so they don't seize. 🍳
