<400 cal, ~ 33 grams of protein
chopped kale + red lettuce for base
croutons are chopped up ciabatta, fresh from farmers market (50 grams)
shredded chicken (100 grams)
dressing is greek yogurt, add anchovies, fresh garlic, shredded parmesan, lemon juice, some olive oil, dijon mustard, dash of worcestershire and salt + pepper – blend it up, i keep it in an air tight container and make enough for a couple of salads
total hack making the dressing out of greek yogurt. so low cal, little bit of added protein, tastes awesome.
