Hello everyone I´m Albert Bevia with Spain on a Fork today we´re going to make some pan grilled asparagus along with some homemade romesco sauce this dish has an incredible flavor and it´s typically served as a starter however you can also serve it as a side dish

As it goes great with some grilled fish this is perfect for the summer and it´s easy to make if this is your first time visiting my channel I encourage to click on that subscribe button if your already a subscriber welcome back ok the first thing we´re going to do

Is make our romesco sauce so let´s grab 2 large ripe tomatoes and let´s slice an X on top of each tomato now let´s grab 3 cloves of garlic and let´s cut a slit on each one let´s add our tomatoes and our garlic to a baking tray

And let´s also add 2 slices of baguette bread ok now I´m going to be adding my baking tray to the oven i´ve had my oven pre-heating in the bake/broil option at 210 C which is about 410 F ok while we have those ingredients cooking in the oven

Let´s grab 6 blanched almonds and 6 raw hazelnuts and let´s dry roast them for about 4 minutes over a medium heat after 10 minutes let´s take our bread and our garlic out of the oven after 30 minutes let´s take our tomatoes out of the oven now let´s remove the skin from the tomatoes

Ok let´s start adding our ingredients into a food processor let´s begin by adding our roasted tomatoes our roasted garlic our toasted bread and our toasted hazelnuts and almonds now let´s add 1 roasted red bell pepper and 1 clove of garlic let´s add 1 teaspoon of red wine vinegar

And about 2 to 3 tablespoons of extra virgin Spanish olive oil now let´s season it with some sea salt some freshly cracked black pepper and let´s mix it for about 3 minutes ok our romesco sauce is done so let´s start cooking our asparagus let´s grab a grilling pan

And let´s heat with a medium-high heat ok let´s grab some fresh asparagus and let´s cut about 1 inch off the stalk ok let´s add a drizzle of extra virgin Spanish olive oil to the pan and let´s start grilling our asparagus once you have your asparagus cooked to your liking

Let´s start plating our dish let´s season our asparagus with some sea salt and let´s top of our asparagus with our homemade romesco sauce and there´s our final dish of pan grilled asparagus with a homemade romesco sauce if you enjoyed today´s video on making this dish please subscribe to my channel
