    Nice work. I use a tray that holds the bird in a more upright position and have even tied a 20 pound turkey to it to smoke it on the egg. It’s hard to mess anything up on them so experimenting is fun. When I’m doing turkey or chicken I also put them in early while the egg is getting up to temp to capture as much smoke as possible. Tend to do mine around 280-320.
