I’m always looking for vegetarian slow cooker recipes and this was a hit with the whole family (the infant, the toddler, the carnivorous husband, and myself).
I drained and rinsed the chick peas, beans, and corn, then I threw all of the ingredients in the crock pot on low for 8 hours. Served with tortilla chips.
In retrospect, I would wait and add the bell pepper in the last hour instead of at the beginning. I would also try adding lime before serving like the recipe suggests, I just didn’t have any on hand. It would be delicious with a scoop of sour cream but our family is currently dairy-free. Fresh cilantro would also be a good addition, or chopped jalapenos on top. Again… I just didn’t have them at home, and this was a lazy back of the cupboard surprise type of meal.
All in all very happy with how it came out. We will definitely be making it again!

I added black beans, increased spices, & reduced sodium (cooking for baby means I’m more cautious about sodium intake; we can always add salt after!).
Ingredients
– 1 heaping cup medium salsa
– 2 tsp cumin
– 2 tsp chili powder
– 1 can no salt added chick peas (540 mL)
– 1 can no salt added black beans (398 mL)
– 1 tetra pack low sodium veggie broth (946 mL)
– 1 can no salt added corn (341 mL)
– 1 onion, diced
– 3 cloves garlic, minced
– 1 bell pepper, diced
