The ingredients are:
12 to 15 yams
2 pks. of butter or margarine (melted)
9 cups of sugar (to taste)
12 eggs (room temperature)
10 to 12 pie shells (cold or frozen)
1 1/3 cup of evaporated milk
1 cup of milk (room temperature)
Nutmeg (to taste)
Cinnamon (to taste)
Pure vanilla (to taste)
1/3 teaspoon salt
Parchment paper
Foil paper
Baking Blind (pie shells) 350 degrees for 25min. Remove beans or weights.Then bake pie shells until brown. Do not remove foil from the rim of your pies. After baking your pies with the yam mixture for 50 minutes remove from oven. Take foil off of the rim of pies and let cool.

Hello and welcome back to te’s kitchen cooking channel got it right that time listen today we’re doing uh sweet potato pies even though they’re made with yams I don’t know anyways and we have sweet potatoes but sweet potatoes are white and I don’t know people always
Done the sweet potato pies we get so that’s what I came up with so we going to do that today so listen I already cut up about um this is about almost 15 yams you could do less this is a large amount because I’m going to be making a lot of
Highes so listen I want to show you how I cut this thing up so if I’m I’mma go ahead I’ve been already um doing this you know getting the um outside off the skin and um cut off any dark spots that you don’t like it doesn’t matter just
Cut it off and if it’s too deep use your knife and dig it out now remember most of your strings are in the ends of the potato so we going to cut these ends off just go I know it look like you throwing away your potatoes and you don’t need
All those strings trust me so it’s going to be some left in here but not as much as it is in the ends of the potato so what I wanted to show you also is that I cut this potato let me cut this in half this is a big piece and
I’m going turn it like this so it’s flat and I cut it real thin I didn’t cut it like um like you would with uh yams because these are going to be you’re going to cook these until they’re almost a mush this is how I do them you can
Boil them also but I like the way look at me I’m just cutting it you know that fell apart so I’mma to cut it just like like you want to lay down like that I’mma cut you like that and make you real thin you see I already put uh a
Pack one pack of butter in there not a lot because I’m going to add some more butter and sugar and all of that when we start putting this pie mixture together so what I want to show you is that I just literally cut this up so thin and um I could probably get
About I’m going to get about 12 12 pies out of this and I wanted to show you all the ingredients that you’re going to use in these um in this uh mixture so look what I do is and I learned this from my mother her name is
Donald is in this pan I have seven cups of water I have two tablespoons of cinnamon and one teaspoon of nutmeg I didn’t put any vanilla or anything in there yet because it’s going to go into our pie mixture and then what I’m going to do is take this and pour it all
Over I got a little spillage but that’s okay uhoh got to stir that up I want all of that cinnamon I cooked it because I don’t like the harsh flavor of cinnamon I like for it to be kind of light tasting not too cinnamon cinnamony and then I had in this
Bowl four cups of sugar I already put half in the middle of here so I’mma sprinkle some on top and this doesn’t matter I’m just cooking this down and um I’m going to cover this with foil and I’mma put it in the oven on 350° I’mma check it after 1 hour and see
What it’s looking like if it’s not mushy enough for me yet I’mma Let It Go if you feel like it should go another an hour let it go another hour and then it should be done by you know 2 hours is a good cooking time and when it being
Covered with this um foil that’ll be good for it to uh steam so I’mma cover this up really tight and then um what I wanted to talk to you about I’m going to get this in the oven but I wanted to talk to you about the seasonings that we’re going to use
What you’re going to need after these jams are done and I brought I have this pie right here because I wanted you to see how I um I’m going to do these pies because you can um you can make your own pie crust homemade is always the best that’s what
I say but anyways I’mma show you after this is done I’mma show you how I um this is closed up but what I’mma do is get your if you don’t know how to make pie crust like me I’ve tried it before but I don’t know what I’m doing
It wasn’t right and I’m not going to like I know what I’m doing so I usually get my favorite pie crust so what I do is oops she is ready so what I do is I’ll take get me I have some more of this type of uh parchment paper and
Everything and where is my for right here what you do is while this is baking or before you bake that you can get your pie shells ready so I usually do look at this it’s about a what about an inch little over inch I do three of them for each
Pie now you could buy at the you know these little kitchen stores or you might find it they have metal rings and you can put that around your pie C so that this is just to keep the pie crust from um the the outer crust from cooking too fast while uh you’re
Doing your pie so what I’m doing is the reason why I’m doing this because I don’t like the flavor of pie dough so I’m going to bake this blind is what it’s called so I’m going to continue to put this foil all around the rim of the
PT that I don’t want I don’t want my the rim of my my pie Browning up yet I’ll concentrate on that when I put the uh pie mixture inside of this pie and I’m really excited about these I do a lot of them at the holidays
So that’s fun for me so look then you take this one I have more you can cut them up get you some parchment paper and hold on Chris one second let me get these I have some beans that I had in the package any beans you
Want don’t matter you could do Rice too or you can get these uh little metal weights and what you do is you take it and you just feel it on top make sure you do not get these beans onto your uh pie inside of your pie thing your crust
You don’t want to bake a bean in there so this is just weighing it down so so that it doesn’t puff up because if you don’t put something to weigh it down and it will puff up and then your pie crust going to be all like this on the
Inside and then what I do is I take this and I put it in the oven for like 25 minutes come back pull it up like this and check it if this is sticky to this it’s not ready yet put it back down put it back in the oven give it another 10
Minutes should be ready by then it’s not like you’re cooking cooking it yet but you’re getting it you know con concealing it or what it what is it where you get it solid you know it’s coming together it’s not going to fall apart be gummy so then you just
Literally take these beans carefully I’mma show you after it’s gotten to that point you take these beans and you just pour them back into whatever container you had and see like I dropped one that’s okay you just get it out carefully because the bottom of your
Crust is going to be kind of cooked now then you take this and you put it back into the oven and you let it continue to cook it will not bubble up because those weights held it down and got it all whatever you want to call it ConEd
Consolidated what you say solid solid yeah right so um then that way you could Brown and my husband used to like it so dark I would get it really dark and he still it take the dang on pie and put it on the the stove and fry it I said my
God how dark do you want it and my mother likes it uh kind of dark too so you just cook it as dark as you want it to be and um I usually I’ll show you what mine look like you know I just like it brown but long as it’s cooked not
This this dough so all right listen we going to get this in the oven and I’ll be right back listen I forgot to tell you about these seasonings that I had here this is nutmeg that we’re going to use in the pie see that nut M and then we’re going
To use like a teaspoon of uh I use coaster salt whatever salt you want to use or light salt or whatever regular salt but you always need to put a little bit of salt and really sweet things just to kind of balance it and then I have my vanilla extract of course
Please get you some good vanilla I had to buy two because I couldn’t find a big one and um they had some other vanilla it it it scared my soul I was like don’t try it Trish don’t try it and then I have some evaporated milk I like to use
This in my pies to just bring on that richness and then I also Al use whole milk you could use 2% you could use uh whatever kind of milk you know you like I wonder what it would taste like with almond milk who knows but anyways and
I’m not going to use probably both of these cans but we’ll see because I think I’m going to use one can and then maybe try that milk you know I’ll show you we’ll work together we got to work with it so um I think that’s all my
Ingredients and of course you know I got my butter and I have my eggs and I’m going to show you how I incorporate that butter into uh the pie mixture so all right if I forgot any ingredients I will let you know all right cool okay
So um we took I took this out of the oven it took 4 hours to cook this I already took half of it out and put it in here let me open this up I already put half of it in there so I can start mixing it up so you wouldn’t have to
Listen to all that and I also I used my slighted spoon to get as many potatoes out as I wanted that I know fit in here with along with the everything I’m going to add then I also took some of this juice and I put like maybe four table
Four big these things um of juice inside of here cuz you want all that flavor and then I started mixing it up just to kind of get it going so what I’m going to start with first which I like to get this buttery taste this is four sticks of butter
Before I go on to that let me show you this I told you about baking those pies blind remember we bake the pies with the beans in it or you could use rice or weight and then after 25 minutes you pull it like this and see you can see it’s still
A little doughy so what I’m going to do is empty these beans out and I’m going to put it back into the oven still on 350 for another 5 minutes and it’s going to turn brown like this one show the inside of that real good Chris nice and
Brown and that way you won’t have that doughy pie you know at the end of your pie you know underneath so anyways this is four sticks of butter you can use Mar I mean this is marar margarine you can use butter you can use half of this but I like a buttery
Pie so I’m going to go ahead and do that and then um I’mma start off real slow and I’m going incorporate this get it going get it going get it going look at that it’s already looking Good the only thing I don’t have in here now is some um vanilla but I’mma get it in there look at how pretty that is see what I’m talking about and I did it just like you and just bake it throw it in the oven and go on about your
Business you got 4 hours to not have to do anything EX go on about your business now listen at this point I’m not going to measure because this is where your taste buds come in involved since if you’re a chef then you know measurements but since we are home cooks and we just
Hey looking at videos and learning how to cook something you go by your taste so I I have a tiny little bit of vanilla left in here that’s not going to work for me I know I’m need some more but I was going to go ahead and use that up
So I have a new bottle right here and look see how I’m pouring this in here show them Chris and it’s not a a whole lot I’m not going to start with too too much from the start but you know that’s a good three tablespoons if
That and then I’mma mix it up some more this is all all a mixing game so we going to mix that vanilla in there cuz after we get the vanilla we’re going to put some more nut made and we’re going to add some sugar and start adding our milk um like I I
Like to add a little bit of you know evaporated milk just a little bit for richness I’m going to go ahead and do that now that’s not going to help thinning it out or anything just a little bit no measurements and definitely I’m going to add me some milk
Let me turn this down cuz it’s it want to Splash me now I’mma go ahead and and look you see I had a cup right here let me see what it’s looking like the thickness and one thing my cousin told me he said if your pie is ever too thick my cousin
Dexter he said um put a uh like a uh I shouldn’t have stuck my thing in here while this machine is on don’t do that to your machine anyway he said do like a u a little bit of flour in your mixture it’ll help your pie to be
Creamy I I don’t have to I’ve tried it both Ways I can get it done with or without it but if you want to be safe and make sure you got that creamy creamy pie then you definitely want to go with some um we we haven’t added our nutmeg we going to add our sugar cuz all these
Things start to liquefy I was supposed to use this cup instead of this can but oh well it is what it is so here we go with the sugar this is four cups of sugar and I’mma see what this is going to taste like I’m going to go ahead and add some
Nutmeg to this not too much we already had some nutmeg in the um in the uh those yams over there and that cinnamon I don’t need any I tasted my um yam mixture and I can taste the cinnamon so we going to go ahead and mix
This up and I’m not you see I haven’t added the eggs at all you want to add your eggs last um because we need to taste this so after we taste it and see if our seasonings are right if they feel real good then we going to go ahead and add
Those eggs but I’mma tell you wrong way I’mma tell you something that you got to do let me Chris can I have a fork right there so I can taste this and you can see these strings too it’s not a lot but you see them and I’mma show you you just
Wash this whole thing off What do I want I’m not going to do it to myself but I got enough butter in there I know I need some more nutmeg I taste the vanilla I taste the cinnamon I taste I need some more nutmeg and I think I I’m going need some more sugar
But we going to see one thing about this nutmeg you don’t want to go hard with it but my late husband gave me the secret cuz he could cook too he learned from his first wife she was a great cook from what I hear so anyways um he said you add the
Nutmeg and then what you want to do after everything tastes good just like you want it you literally leave it alone walk away and let it sit give me another Fork give me some forks and let it sit for about 3 to 5 minutes come back and taste it and uh thank
You it’s going to taste different you’re going to see that you like I did all that and it was perfect and it’s not going to be perfect that or something no but I need some more nutmeg I want more butter I need tt might have TT she’ll tell me m it needs
More we’re going with the nutmeg though cuz my husband was right on that it’s going to keep take till you get it right keep on adding what you need to add keep on adding what you need to add so I’m going stir this up some more
We going to keep on working with it that’s what you doing you working with it and you tasting it and um then when you think it’s perfect that’s when you let it rest let all those little flavors M together see this is what I do this is
How I make my Powers but I usually take this off once I get the flavor right to where I like it then I take this off and go wash it off then put it back on make it stir up some more see those strings
Take it off go wash it off bring it back and that’s how you get even more strings out of your pies so okay it’s a pretty Orange that’s sugar and that nothing woo okay so do I want to take it up a notch hey we going to take it up some more
This is four cups all those yams some more nutmeg this is that combo that we going to use we already got vanilla we got all that other stuff I can taste all of it so this is going to be my last go round then I’m going uh continue
To take get those strings out I’mma wash them off in the sink I actually want to show you that then I’mma bring it back over this more stream wash them M I’m keep doing that then I’m going to let it sit come back and taste it in about 3 to
5 minutes and um even when I add these eggs it’s going to change it up again so all you really going to have to do is go back to your nutmeg maybe your sugar cuz as you can see I I haven’t used it all so that was four
Cups so here we go I just you I went out on the lid and did the rest of that so let me yeah got another one get a taste and the eggs are going to bind this all together how many eggs I got six eggs and this was about 12 pot
Big potatoes so I did half of the mixture and I’m doing another half because it’s too much for my bow and then I’m going to um actually freeze the second half of my um my mixture that’s it and that butter it’s coming through in the end you know me I’m
A i a going to say I’m a butterhead but you know I like to taste it when it’s buttery oh my God oh my goodness you know that’s why seeds candy is so good that buttery taste at the end oh Lord that’s the best all right so listen oh let me show
You how to do this I hope I don’t waste it all over the floor so let’s show them this so CD strings I’m wash them off just like that those are stringy and these are short one because it came from the middle of the potato the
Yam so that’s all I do is wash them off go back over here put it back on oh you did not I make see that’s that’s the thing about cooking you going to make a mess man there you go and then I do it again turn it up a
Little bit not too high you don’t want it flying out L the container then I’mma turn it off see those those are strings see that see how it went down like that those are strings so see I’mma get all these strings off and you do this as many times as you
Want to you know it’s not going to hurt anybody to have to spit out a string or to but that’s how I get mine out and I don’t do it forever I just do it as many times as I feel like it and I’mma throw all that in the trash
See those that is not going through my SE because those are streams and stuff and that’s all I can do is continue to um do this over and over again and like I said if you don’t want to do that that’s fine leave the Stream in
There now I’m going to let this rest because I’m not going to put these eggs in there yet I can always fix the flavor later and um it’s pretty much going to be sugar or just nut EG probably not too much more sugar you know you want it sweet but you you don’t
Want it you know dog on sweet and you can see how much milk I use that’s how much I had left and that’s good enough for me me and then like I said these are going to bind this uh mixture together so um and I already
Showed you the pie shell and as you can see look at that I wasted some what you call them in there but um when I’m ready to bake them I’m literally going to pour it right into those pie shells and um we’ll bake them for probably 45 minutes to 50 minutes the
Eggs yeah when you going to add them I’m going to add these eggs um after I taste it a couple of times cuz like I said these are raw eggs and I just don’t feel safe just to keep tasting a mixture that has raw eggs in
It so I usually uh just flavor it come back flavor it again come back flavor it again so that when it’s that last time when you come back and it’s like the same you like you know what I like this because what I should have told you is
Whatever your mixture tastes like that is what your pie is going to taste like so if this is not sweet enough it’s not going to be a sweet pie if it you don’t taste the you know you want to taste vanilla or cinnamon or whatever and you don’t taste it here you’re not
Going to taste it in the finished product so when you add these eggs egg and it changes the taste you fix it and that’s it let it sit come back and check it one time and that’s it and then you’re good to go you ready to start
Pour your uh filling your pie uh crust your homemade pie crust and all of that you know and uh get your pies done for your event Gathering holidays hey so anyways we going to be right back I’mma let this sit for a few minutes come back
And taste it I’mma do that off camera and see what it tastes like and tell you if I had to add any more nutmeg I never knew I was scared of this cuz it’s a strong spice but this will wake up your pie little by little you can’t just dump
It and say oh I know it’s going to be nutmeg don’t do that your pie will be wrong it’ll be wrong all right so we’ll be right back okay so we’re back and I told you that I was going to take that other half of
Those yams I put them in here I started mixing it up already with my mixture I already added some more vanilla remember it’s all to taste we’re not going to measure this stuff now this is the nutmeg that’s the taste sprinkle sprinkle at a time and then I did 1/4 of
A teaspoon of salt pooser salt whatever kind of salt you want remember this was about a half2 cup of milk that I put in in with the first pies and then I did 2/3 cup of uh evaporated milk cuz I just pointed that little richness you don’t
Have to do that much if you don’t want to and of course I did six um sticks of margarine you can use butter margarine or whatever you like I didn’t need to add any cinnamon cuz the cinnamon was all through those those yams and remember I put some of that juice in
Here too so I wanted to show you something let me turn this off all spice you can also use this in your pies I just didn’t add any because my oldest daughter she claimed she could taste it so she didn’t want it but anyways these are the
Pies I have more cooking and I’m going to freeze this for Thanksgiving and I’m going to make these pies later but these right here we already ate one up sorry we couldn’t wait so these are all the pies and you can add whipped cream on top you know do your little dollop if
You want to just to make it pretty put a little sprig of mint you know on your uh at your Gathering or whatever um you can actually cut these tins off I was going to do that and I forgot you can just cut it off on the sides with a scissors and
Then it’ll release your whole pie crust you could take that whole thing and slide it onto a a a cake Plateau or something like that to stand your pies up have them high and low and all that kind of thing all right so listen I’m going go ahead and finish those pies
That’s in the oven get this mixture in the freezer is already been tasted and rested and tasted and rested and all of that don’t forget to add your eggs it was six eggs and um uh I want to tell you this when I said 12 potato potatoes that was large
Potatoes so that’s what I did 6 age 6 age for uh half and half you know 12 12 so six eggs in here six eggs in there but um what did I want to say take it my memory grows better and better every day okay so I wanted to tell you
Something um oh I I know I want to tell you just don’t remember don’t taste those don’t put the eggs in until last so that you can do all your tasting and resting and tasting and resting and then at your eggs rest it one more time
Season it one more time and it all it ended up being was just sugar and Nutmeg that I had to add so um as far as the sugar it was four cups I believe and then I ended up adding a half a cup more more but you don’t have to make it as
Sweet as you want to everything is by taste once you get that that base flavor from those yams cooked in the oven right here it’s all by taste whatever you want to add little by little oh my God if you don’t like pumpkin do
Not do not I Ado you do not add pumpkin spice oo Mercy I don’t know what that is don’t do it don’t do it it tastes like chemicals I’mma stop don’t use the nice pumpkin spice it’s so precious but if you don’t like pumpkin don’t use
That or put it what you do is anything you want to try new you take a little bit of your mixture out of your your main mixture put it on the side and then add a little spice of whatever you thinking about Ginger or uh all spice or
Pumpkin spice whatever you think you might want to add put it in that little taste mix it up taste that and then you’ll know oh my God thank God I didn’t put that all the way in my pie mixture all right listen we going to see you on

Ex with a different crust I usually do it with this one but we going to do it with something else that tastes better and I know a lot of people know about it my hus my ex my late husband hit me to that and I’m like I’m
