A few months ago u/catonic suggested using a dimmer switch to dial in some low and slow temperatures with my crockpot. Well, I finally got the equipment together and here’s what it looks like. 🤷🏻♂️ The 800 watt dimmer switch was purchased used ($0.99), and I don’t have a knob yet.
Worst case, it can easily keep the temperature +/- 5°F from the set point. I just use a digital thermometer and then adjust the input watts with the dimmer switch and power meter. I did a pork shoulder at 170°F for 38.5 hours…it was very tender, and tonight I’m doing ribs for the first time with the setup. u/sixminutemile gave me some good low and slow advice… and hopefully I won’t mess it up.

Years ago the makers of these things changed it so that they were hotter then long ago as people were getting ill from not cooking stuff long enough.
So it is not a defect or problem for them to run hot. They were made that way
