Grilled Chicken, Tortellini & Pesto Salad

2 grilled chicken breasts, diced (a store-bought rotisserie chicken would work well, too!)
1 lb. cheese tortellini
1 cup frozen peas
¾ cup pesto (store bought or homemade)
2-3 Tbsp. mayonnaise
1 pint grape tomatoes, halved
8 oz. fresh mozzarella, cubed

Boil tortellini according to package directions (you can add the peas in with the tortellini!). Drain and rinse to cool. If you haven’t already cooked your peas, microwave them for a minute to defrost. Combine pesto and mayonnaise in a large mixing bowl. Add tortellini, diced chicken, peas, tomatoes, and mozzarella. Stir to combine. Serve room temperature or chill 1-2 hours before serving. Enjoy!!

Hi and welcome to family recipe my name is Ann and today we’re making one of my favorite pasta salads chicken pesto tortellini This salad has been a family favorite for years my sister had a at a friend’s house when she was in high school and we’ve been making it ever since so I’m starting with about a pound of fresh tortellini and fresh pasta is so great to cook with not only does it taste good

But it cooks super fast so I’m going to add this to my pot of boiling water and let it cook just for about two minutes until it floats to the top The great thing about this recipe is that you can take a lot of help from your grocery store so for the sauce we’re starting with 1 7 ounce container which is about three-quarters of a cup of store-bought pesto but of course if you want to make your own go for it so

I’m going to put that in my bowl and you can stop there for the dressing if you just like pesto but I like to add about 2 or 3 tablespoons of mayonnaise to make it a little bit creamy you could also substitute maybe some Greek yogurt or plain low-fat yogurt just for that

Creaminess but less fat I’m going to add this in and then I’ll show those two together and we have our dressing next I’ll add in our 1 pound of cooked tortellini and I forgot to mention I’m using a 3 cheese tortellini today but there’s so many different flavors out

There you can experiment with whatever you like so I’m going to add that in and then toss it to coat it in the dressing The next ingredient I’m adding is two boneless skinless chicken breasts which I marinated in my mom’s perfect chicken marinade I’ll link that recipe below I grilled them and I let them cool and then I dice them up into small cubes this is a great opportunity to use out

Of any leftover chicken you might have from a previous meal in the week or buy a rotisserie chicken at the store just chop it up it’ll be great why that in and stir that to coat it in the sauce the last ingredient that I’m adding from

The original recipe is 1 cup of frozen peas I just pop them in the microwave for about a minute or two today or if you remember which I did in you can add into your boiling water along with your tortellini and it’ll all cook at the

Same time so we’ll add those in a nice burst of color and they kind of pop in your mouth as you eat them to stir that up and you can stop right here this is the original salad and it’s amazing why I like to add a little twist this is

Kind of making it a caprese salad so a typical caprese salad would be mozzarella tomato and basil we’ve already got the basil going on in the so so I cubed up an 8-ounce ball of mozzarella we’ll add that and also a pint of grape tomatoes or cherry

Tomatoes to again for a nice pop of color and a really juicy bite the salads all mixed up and you can eat it right away while it’s room temperature or you can chill it for a couple of hours in the fridge this makes a great really easy and fast weeknight supper or lunch

And if you omit the chicken it’s a great vegetarian dish or a nice side to bring to a party and now I get to taste it mmm I remember why this is one of my favorites you gotta add the mayonnaise in there it adds like this tangy sweet
