This is now one of my favorites. It hits all the right notes for me for an everyday salsa.

    Super small batch.

    3 tomatillos; 15 dry chile de arbol; 2 cloves of garlic; 1/8 or so of a small white onion. A tiny handful of cilantro.

    Boil the onion and chiles together with the tomatillos, until the tomatillos change color slightly. Strain but save the water. Throw everything into a blender, including a good splash of the boiling water. Blend well.

    Salt to taste. A pinch of msg is welcomed.
