CONTEXT: I made a new batch of kimchi about 2 months ago, and I noticed a whitish film over the cabbage on all my other unopened kimchi jars. It’s definitely not fuzzy. The cabbage leaves on top weren’t covered by the brine. I’ve looked it up but it doesn’t look like the yeast spots that sometimes arise on the kimchi.
I scraped the top & taste-tested it, it tastes like kimchi but very very very strong. I’ve eaten very old kimchi & it didn’t taste as strong as this one. The smell is not off, perhaps not as pungent.
I used 2 glass jars (one has this white film, the other one doesn’t) & old ssamjang containers (which I previously submerged in pure bleach for over 30 min. — I normally boil them but since these were plastic I didn’t want to risk it). I also put plastic wrap on top to press it well in order to get rid of air bubbles. They were kept in the fridge at all times. The thing is, the one jar which I’ve been eating from since I made it didn’t have anything.
This is the first time this has happened to my kimchi. Has this happened to you? Should I discard it?
