This is the soft version of the cookie, not the crunchy one. They were delicious with an espresso.

Those are really good looking. Share the recipe. I tried it’s not easy at all.
My first batch was too liquid and it got gummy.
My second batch was too firm and it was more like pasta di mandorle than soft amaretti.
I tried to cook them with different timing and corrected the recipe to avoid too liquid/firmness… but I don’t think they are perfect at all in my current recipe. So I would actually like to know how you was able to make them, how much to cook them, at what temperature, and if there is a secret to make them soft without a gummy texture.
