This is my quick and easy recipe on how to make the most DELICIOUS potato skins!

NGREDIENTS

500g potatoes
100g cheddar cheese
1 tbsp olive oil
1 tsp garlic powder 
2 slices of bacon
Sprig of parsley 
30g butter
Pepper
Salt

METHOD

1. Pre-heat the oven to 180c/370f
2. Clean the potatoes with water 
3. Poke the potatoes with a fork
4. Rub with olive oil
5. Place on an oven tray and cook for 1 hour
6. Finely chop the parsley and spring onion
7. Melt butter in a bowl with salt, pepper and garlic powder
8. Chop the bacon into small bits
9. Fry in a pan until crisp 
10. Remove the potatoes from the oven and scoop out the inside. 
11. Brush inside and outside of potato
12. Put in the oven for 10 mins at 180c/370f
13. Flip over and cook for a remaking 10 minutes
14. Load the potato skins with bacon and cheese, put back into the oven for 3 more minutes
15. Remove from the oven and garnish with spring onion and parsley
