Ok guys! Brace yourself for a break down of the dish that I think will be pretty rough for starters. Overall it was a 10/10 for flavor profile and for the end presentation. 😍 5/10 for prep.

Prep Review: Lots & lots of chopping, I didn’t even bother to time it cause sweet potatoes are always a hassle for me when dicing. Also lots of chopping means lots of dishes. I had a separate bowl for my mushrooms, sweet potatoes, diced bell pepper, scallions & ginger just to keep things organized. Mind you I am cooking for 4.

Cooking Review: The directions were pretty straight forward but you have to READ, no skimming cause you think you know the step. You can’t just put the rice in, you have to sauté the white scallions with the minced ginger then add in rice. TIP: Use all the ginger, I had some ginger left over and realized it was needed for the rice only and nothing else.

Rice: I sautéed the scallions and ginger in a small skillet and then added it into a rice cooker, then added rice and water and seasoned with salt. Anytime Hello Fresh tells me to cook rice in a pot stove top I head straight to my rice cooker. Fool proof!

Sauce: The Sriracha Soy Mayo was really good, my fam isn’t crazy about heat so I skipped adding in the chili sauce packets. TIP: The sauce will be runny, probably more than you’d like it to be, I added in about 2 additional tablespoons of mayo and then refrigerated it until I was ready to plate. Add mayo until desired thickness and if you can, use a metal whisk to get the mayo clumps out. Don’t worry about it changing the flavor cause the soy sauce carries it all and additional mayo will not change the flavor profile.

Fam reactions: They loved it! Mom cleaned her plate. lol Dad went back for seconds since I’d say this can serve 5 people and my uncle is in town and he was impressed that it’s Hello Fresh, since he never tried it before.
