INGREDIENTS

for the grits

2 cups chicken broth
2 cups whole milk
1/2 tsp garlic powder
salt to taste
2 Tbs butter (i used salted)
3/4 cup cheddar
1/4 parmesan cheese

for the shrimp

2 lbs shrimp
8oz bacon
salt and pepper to taste
2 shallots
some green onions. about 4 stalks
2 cloves garlic
1/3 cup sun dried tomatoes
1/2 cup chicken broth
2 Tbs lemon juice

Hey guys welcome back oh welcome to cooking with claudia if you’re new today i’m showing you how to make this delicious shrimp and grapes recipe the shrimp is packed with so much flavor and the grates are so creamy and buttery delicious let’s get started all right you guys so for this shrimp

And grapes recipe we’re going to start by cooking the grates first i’m pouring 2 cups of chicken broth into a pan over medium heat i am also going to add 2 cups of whole milk next i’m seasoning with half a teaspoon of garlic powder and salt to taste i’m going to mix

Everything together then allow this to come to a simmer once the mixture is simmering i’m going to toss in my grits i’m using one cup of stone ground corn grits i’m mixing everything in then i’m going to place the lid on and cook this for about 20 minutes

While this is cooking we’re going to start making the shrimp i have my cast iron pan heating up over medium heat but before we cook the shrimp we’re going to use bacon in this recipe so we’re going to cook that first i’ve gone ahead and cut up 8

Ounces of bacon i’m going to cook until all the fat is rendered and the bacon has turned golden while the baking is cooking make sure you keep an eye on the grits you want to stir periodically that way it doesn’t burn because that can easily happen

All right back to the bacon it’s looking crispy and golden so i’m going to take it out of the pan and set aside for later once the bacon is out of the pan we’re going to cook the shrimp i’m using two pounds of large jumbo shrimp

I’m going to toss them into my pan cooking the shrimp in that baking fat is going to add so much flavor i’m arranging the shrimp in a single layer then i’m going to season with salt and pepper to taste i’m cooking the shrimp for about two or three minutes on medium heat

Be careful not to overcook your shrimp otherwise they’re going to become very chewy as soon as the shrimp has finished cooking remove from the pan and set aside for later Next in the same pan we’re going to cook some vegetables so i’m quickly chopping up some shallots i’m using two shallots you can use a small onion if that’s what you have i am also chopping up some spring onions we’re going to cook the pale part of the

Spring onions together with the shallots so put those two together and the green parts we’re going to cook later in the recipe all right so in the same oil from the bacon i’m going to toss in the chopped shallots and the pale parts of the green onions

Go ahead and cook the onions for about a minute or two or until they turn translucent then we’re going to add a third cup of sun-dried tomatoes i like to chop them up a little because i don’t like to bite into huge chunks of tomatoes the oil from the sun-dried tomatoes is

Going to add a lot of flavor i went ahead and minced three cloves of garlic i’m going to add that to the pan i’m still cooking on medium heat i’m going to cook everything for about a minute or until the garlic begins to get fragrant next i’m adding a half cup of

Chicken broth i’m mixing everything together then i’m going to let this cook until it comes to a simmer i let the sauce simmer for about one minute now i’m going to add the cooked shrimp i’m also going to add only half of the cooked bacon the other half is for garnishing when we

Serve the food i am also adding just half of the green onions and leave the other half for garnishing as well the last thing we’re going to do is finish this off with two tablespoons of lemon juice mix everything together then that’s it for the shrimp you guys

We’re gonna finish the grates very soon but look at how delicious this looks it smells so good and it’s so tasty all right so once the grates are done cooking we’re going to make them extra delicious by tossing in two tablespoons of butter three quarters cup of

Cheddar cheese and a quarter cup of parmesan cheese i’m going to mix everything together until the butter and cheese melt into the grits and it looks creamy delicious like that then we are ready to serve so when you serve your shrimp and grates you can just top it with the extra bacon

And spring onions we set aside to make it look nice and presentable you know this type of recipe doesn’t have the most amazing look but it’s just how you serve it that’s going to make it enticing these shrimp and grates came out so delicious you guys

    One thing I like to do is use a Cajun seasoning on the shrimp because that is how I learned to make it.
