I had no idea how this cake would turn out construction or decoration-wise, other than I *needed* it to be cat-shaped. A few years ago I saved an image (not sure from where, my guess is here on Reddit, lol) of someone’s cute orange cat cake (see image 4), and this year I had the urge to make my own.
I wasn’t sure how I would want to construct it, but eventually using my 6″ pans seemed like the easiest way to get the size and parts needed, instead of making a large sheet pan cake.
I used King Arthur’s gluten-free yellow cake mix – I have a mild wheat allergy that can wildly vary with reactions, so I figured My Cake My Rules and opted to not have to worry about that issue for my birthday. I added about 1 cup of sprinkle jimmies to the batter to make it m a x i m u m funfetti, and holy mother of gahd, that’s what I got. I added lychee extract to the batter as well…and added waaaaay too much. In my defense I was worried about it baking off, but that was not the case. 🥴
Weighed out the batter and divided it as best as I could between four 6″ rounds. Cut about…1? 2? Inches off the bottoms to give it a flat bottom but still have a rounded-in shape at the base. Used 3 of the wedges to make the cat booty, trimmed ends off of those to make ear triangles, 1 wedge to make the tail, then made the paws with mushed together bits.
Frosting is my homemade recipe that is dairy-free, and I added coconut extract to it. The purple color is from ube extract that makes the most perfect purple to ever purple, and it smells SO GOOD.
