Probably a dumb question since it seams so simple but I just cant get it right. The taste, texture and color aren’t right when I make it! I think there’s tomato, onion (or maybe shallot?), cilantro, jalapeño, and maybe lemon? I’m thinking they might use canned tomatoes but I’m not sure.

Ask someone at the restaurant. I have a local place famous for their chowder and they have the recipe printed out on little pieces of paper.
Food processor.
Presentation is key.
Edit: it looks cooked, like maybe either fresh tomatoes/onions/jalapenos simmered for a bit prior to food processor (I don’t see any raw onions), or as you said some canned/stewed tomatoes. Likely a bit a of vinegar or lime, salt/pepper/maybe other spices, with the cilantro added last/fresh. If it has a sweetness to it I’d think it was canned tomatoes.
