
Another great value from Costco. This was half of a package of their lamb loin chops and made a great dinner.
1. Preheat large sauté pan to medium high while you pat dry and season the chops with salt and pepper.
2. I added 2 tbsp avocado oil to the pan and then seared each side of the chops for about 3 minutes until golden brown.
3. I reduced the heat to low and added about 4 tablespoons of Kerrygold butter
4. While the butter melted, I added finely minced rosemary (about two tbsp) and garlic (same) to the pan.
5. I tipped the pan to allow the melted butter and herbs to pool and then I continuously spooned the butter and herbs over the chops until the largest chop reached 124 degrees internal temp
6. Rested the meat for a few minutes and then served with tzatziki sauce.
I was very happy with the results!
