I made the vegetarian version of this the other night. It was good enough, but I thought it lacked something, possibly “meat”. I thought shrimp might have been a great addition (similar to their shrimp penne bake I guess). I also thought it needed something crunchy with it, toasted bread, salad maybe. It just was meh. To me anyway. My SO loved it and ended up scooping everything I didn’t eat out of my bowl, lol!
