I tried this one too! The sauce was really good but it’s not actual Romesco sauce, it’s more like inspired by it, feels like it’s missing something. Try subbing the pepitas for roasted almonds and hazelnuts (or a few pine nuts too), it turns out better! Another sub is adding fried bread (like baguette) instead of panko.
