Ingredients

– Gluten-free pasta (choose a shape like penne, fusilli, or shells)
– 1 can (about 5 to 6 oz) tuna
– 1 large tomato, diced
– 2 stalks celery, finely chopped
– 1 can (about 15 oz) black beans, rinsed and drained
– 1 small red onion, finely chopped(optional)
– 1/2 cup Kalamata olives, pitted and halved(optional)
– 1/2 cup Greek yogurt
– 1/4 cup vegan mayo
– 1/2 cup feta cheese, crumbled
– Salt and pepper, to taste
– Fresh herbs (like parsley or dill), for garnish (optional)

Instructions

1. Cook the Pasta:
– Cook the gluten-free pasta according to the package instructions until al dente. Be careful not to overcook, as gluten-free pasta can become mushy if overdone. Trust me
– Once cooked, drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.

2. Prepare your Salad:
– Drain the can of tuna and flake into a large mixing bowl.
– Dice the tomato, chop the celery, rinse and drain the black beans, finely chop the red onion, and halve the Kalamata olives. Add these to the bowl with the tuna.
