
This does not look terribly tasty but it hit the spot. Full disclosure: I made this 2 months ago and threw half in the freezer then reheated it today and added a squeeze of lemon juice. It tastes even better today than it did fresh out of the slow cooker. Recipe link in comments.

We did not use the parmesan rind or serve with parmesan due to a milk allergy in the house. We also mixed the parsley directly into the soup right at the end.
Fresh out of the crock pot we found it a little bland. Added hot sauce in the bowls to give it more flavour… But after sitting in the freezer for 2 months & adding a squirt of lemon juice it was incredible this time around – really hit the spot!
We served it with toasted buns.
