Needed beef this weekend. The briskets have been huge (14-20 lb) and expensive around here lately. Went with chuck roast today. Plowboys Bovine Bold with Worcestershire binder, Wrapped in butcher paper at 165 and finished on the foil to get more bark at the end. Traeger Silverton 810 (2022) with Bear Mountain Bold.
