Dave’s Georgia Black-Eyed Peas

    * 1 LB black eyed peas soaked overnight
    * 6 cups water
    * 1/2 pound bacon
    * 1/2 pound ham (i used 12oz)
    * 1 large yellow onion diced
    * 4 chicken bullion cubes (i used 3)
    * 4 TBS butter
    * S&P TT (i ended up only adding pepper)
    * Roux (optional)

    Soak beans overnight.

    The next day: Cook bacon. Set bacon aside and crumble. Fry diced onion in bacon grease and butter for 10 min until edges start to brown. Pour everything (butter/grease included) into crock pot except for salt and pepper. Cook on high for 4 – 5 hours. Season to taste. Thicken with roux if necessary.

    Rice: I used 2 cups uncooked rice in 4 cups chicken broth which yielded 6 cups of rice cooked. This was good for 7 portions, each slightly less than 1 cup.

    It does look really good, but wouldn’t the rice soak up all the juice? I’d add extra liquid if adding all that rice, or package separately.

    I found the recipe on Allrecipes.com. I havevused for 5 years on New Year’s Day. My momma was from the south, and this is a southern tradition. It’s great.
