The accidental low cal explanation: the eggs were really small, and one of them didn’t have a yolk! Then my cheese slice was smaller than usual, and I wasn’t bothered to add more. Then half the tomato was bad, but the other half really good, and then the salsa just had way fewer calories than I thought.
I will probably have more egg and salsa on this in the future, and use haloumi (and more of it) rather than cheddar, and maybe a squeeze of lime juice!
Still, took about 15 min to make and now I’m stuffed 😀
