Can I smoke a small brisket like this (3lbs.)? This will be my first brisket. I was going to follow the directions of this recipe:

Smoked Pellet Grill Brisket (Texas Style)

Is there anything different or special I need to do because this is such a small piece?

    As mentioned it will cook faster. I like getting the flats for consistent thickness and even cooking plus I like the leaner meat. Could give both a try but I honestly think smaller pieces are easier to do and take up a lot less pellets and time.

    This must be a northern thing. I don’t recall ever seeing anything like this called a brisket in all my years of smoking food.
