You won’t regret trying this recipe, it’s one of the best ways to make Fettuccine Alfredo with juicy tender chicken. It is ADDICTIVE and delicious.
You will need:
for the chicken;
1 1/2 pound of chicken breast/ 3 chicken breasts/ slice each breast in two.
seasoning:
1/2 tbsp salt
1 tsp black pepper
1 tsp red pepper flakes
1 tsp garlic powder
1 tsp paprika
1 tbsp Italian seasoning blend
3 tbsp olive oil
for the pasta:
14 oz. fettuccine pasta
deep pot filled with water
2 tbsp salt for the pasta water
*save a cup of pasta water after cooking the pasta to thin and reheat if needed.
3 cups heavy whipping cream
50 g of butter
3 large cloves of garlic smashed
1 1/2 cups grated parmesan cheese
basil for garnish
Preparation:
Slice each chicken breast in two for easy cooking. If you have uneven thickness, use a mallet to even them out.
season with all the chicken seasoning, add the oil and mix well. leave on the counter top for half an hour to come room temperature.
Boil a generous amount of water in a deep pot, let it boil then add the salt and pasta. Cook according to package instructions.
Make sure to save some pasta water after cooking.
Heat a shallow pan or cast iron, add 1 tbsp of butter and 1 tbsp of olive oil. Cook the chicken in batches for 5-7 minutes on each side depending on the thickness.
Remove from the heat and add 40 g of butter and garlic cook for 10 seconds then add 3 cups of heavy whipping cream. Let it cook and thicken for 10 minutes. After 10 minutes add the drained pasta, mix well. Turn off the heat, add the parmesan and mix well.
Adjust the seasoning with more salt and pepper. Just be careful not to add too much salt because the parmesan is salty.
Slice the chicken and serve on top of the pasta. Garnish the plate with more parmesan, basil and enjoy.
