Today we’ll be making a kale butternut squash  and Farro salad for this recipe we’ll need kale   olive oil pumpkin lemon garlic hot sauce spring  onion sun-dried tomatoes Farro pomegranate seeds   feta cheese pine nuts cilantro and parsley  and if you’re new here I’m Maggie this is No  

Frills kitchen where I teach you how to cook with  confidence with nothing fancy required the first   step is to prep your kale so after stripping it  from its stems and chopping it into bite-sized   pieces drizzle the leaves with a bit of extra  virgin olive oil then sprinkle a few pinch of  

Salt over the leaves and using your hands massage  the oil and salt into the kale for a minute or two   this will help tenderize the leaves let the salt  sit for around an hour or longer this is even  

Something you can do a few days ahead of time  now it’s time to prep your butternut squash add   your peeled and diced squash to a large sheet pan  drizzle with olive oil and season generously with  

Salt and pepper tossed it combine and transfer to  a 200C 400f oven and roast until very tender when   pricked with a fork around 25 to 30 minutes but  it can be longer depending on your oven meanwhile  

This is a great time to make your salad dressing  we’ll start first by adding a bit of olive oil   to a medium mixing bowl next grate in the zest  of one lemon and using the same grater add in a  

Clove of garlic as well we’ll be using the juice  of the lemon as well well so it’s much easier to   take the zest off first so next add in some fresh  lemon juice to your bowl I also like to add a few  

Dashes of hot sauce here you can choose whatever  hot sauce you like or leave it out all together if   you don’t want to use it now to your bowl add in  a few thinly sliced green onions and some roughly  

Chopped sun-dried tomatoes all you need to do now  is Stir this all to combine and set it aside by   the way if you’re finding this recipe helpful it  would be great if you could give it a thumbs up  

As it helps more people find my videos moving on  to your salad bowl add a bit of cooked farro to   the kale also add in some pomegranate seeds for a  bit of fruity acidity and some toasted pine nuts  

For some Crunch and nutty flavor and crumble in  a bit of feta for a brining bite then it’s time   to add in a ton of fresh herbs I like using  cilantro and parsley but go ahead and use any  

Combination of tender herbs that you have on hand  some mint dill or chives would also be super good   here add in your cooked and cooled butternut  squash now before pouring your dressing over   the salad toss everything to combine then all you  need to do is serve and enjoy if you liked this
