These zucchini rolls are one of my favourite quick recipes to make during the week because it is both easy to make and flexible. These are so delicious and we waste no zucchini as we will use it all. 🍴3 courgette /Zucchini Recipes
Ingredients
Oil
Small onion chopped up
1 clove of garlic
Salt and pepper to taste
1 zucchini/courgette
Pinch of nutmeg
½ tub of Philadelphia cheese (you could use ricotta)
2-3tbsp parmesan
Tomato sauce or Sundried tomato sauce
Large handful of Spinach
½ cup of Mozzarella cheese ( just enough to cover the top)
Basil/parsley for garnish
Glass of wine to drink with the meal (optional!)

Hi there YouTube Friends welcome back to Auntie’s kitchen and today we’re going to be making zucchini Roll-Ups and the great thing about this recipe is we’re going to be using the whole zucchini chop up a small onion and a clove of garlic then wash your zucchini and peel
Off thin straps of all four sides and place all of these onto some kitchen towel then cut into small cubes the center part of your zucchini in a pan season you’re onion with salt and pepper then cook until salt then add your zucchini cubes garlic spinach a little
Bit of nutmeg and cook until the spinach is wilted cut up your large spinach leaves then add your cream cheese parmesan and mix this all up spread out a tomato pasta sauce with your choice in your dish then sprinkle it a little oregano overlap two zucchini strips add
A spoonful of your cream cheese mix then roll up and place into your oven dish and repeat this until you’ve used up all of your zucchini I like to spread some sun-dried tomato sauce on top but you could use the same sauce that we used before sprinkle some mozzarella then
Place into your preheated oven for 30 minutes top with some fresh basil and then enjoy your zucchini Roll-Ups with family and friends thanks for watching and I hope to see you in the next video
