Here in new england we don’t mess around about lobster and just the other day i was driving around and stumbled across a billboard that was announcing panera’s new lobster roll now don’t get me wrong i love panera every time i’m sick i get their chicken noodle soup and they make a mean
Broccoli cheddar mac and cheese they also have a few good sandwiches but more importantly to me there’s nothing like snacking on a good baguette but let’s take a step back lobster at panera i did some research online and supposedly it combines lobster claw and knuckle meat with the tarragon lemon

All the way down we’ll continue to swirl it around until we have a beautiful light golden brown color after this we’ll let our brown butter sit and separate which will allow us to take out the perfect parts we want later while our butter begins to separate we’ll take
Out our lobster that is hot dredge them into this ice bath to cool them off for the record i’ve checked the gender it’s a male lobster i think you all remember my cameraman trying to figure out male verse female lobster manny any guesses what this one is here female close it’s
The other one 50 50. danny what’s this one female very good nailed it this one’s too small we’re letting her go we’re let him go letting him go and then it’s time to break him down Now i’ve taught you this before but it’s time to break down this lobster and get every last piece of meat out we’ll begin by cracking off both of the claws and arms here’s the claw and here’s that beautiful knuckle meat then ripping off that beautiful tail then with the tail
Upside down we’ll shimmy in our fork straighten it out and pop out the entire tail that’s the easiest way to do it next we can’t forget the meat in the back of the tail we’ll twist each one of these off and squeeze out that meat every last bit we’ll tear off all the
Legs and if you want to dig through the head you can find some meat in there now we’ll roll a rolling pin over those legs to push out all of that leg meat now to get out the knuckle meat we’ll pull it all out and finally we’ll break off this
Claw piece then crack and out comes our lobster to put together our lobster filling lobster a nice big scoop of mayo then perhaps most importantly and my secret ingredient for the best lobster roll ever a nice scoop of all those perfect golden brown milk solids from
Our brown butter that right there is the part that’s going to give us that flavor so you really want to aim to just scoop off what’s on the bottom this right here is liquid gold next up to go in line with the panera lobster roll we will put
A tiny bit of fresh tarragon which i’ll gently tear up as i drop it in followed by a few nice bits of fresh dill which to me is a must with any lobster roll then to finish things off some lemon zest nice squeeze of lemon juice and a
Little pinch of osmo white truffle now mix it all up then toss it in the fridge my last little trick with the lobster all has to do with the roll itself i’ll trim just the edge off of each side of our roll so that we’ve got a nice flat
Edge on each side to work with then we’ll come right down the center for where we’re going to put our lobster later now into our pan with the rest of that brown butter oil which doesn’t have any of the milk solid so it won’t burn
Then we’ll drop in that bun and let it toast once we’ve got that perfect golden brown side we flip that right there is the perfect toasted bun to load up our lobster roll we’ll open it up and add in tons and tons of lobster you’re not
Going to see me doing any of those lettuce tricks that everybody else does i want to load this thing up so that you can get the perfect bite with not so much lobster that you can’t actually bite it but enough that you know you’re not being ripped off we’ll finish it off
With a few sprigs of fresh dill a light kiss of lemon zest and just a bit of black osmo flaky salt just to get that nice contrast i gotta admit both of these look pretty great but this thing’s got seasonings that’ll knock your taste buds clean off and nobody gets lobster
