    You can cut it into steaks (NY strip). Or cook it similar to prime rib, using a good herb season.

    Cut into steaks. Or dry age and then cut into steaks. Vacuum seal and then enjoy whenever you want steak.

    I’d cut at least half into steaks, then would cook the remainder as a roast. All of the above on the grill, of course, but that goes without saying, yeah?

    Smoke it like a pork shoulder and remove about 15° less than desired doneness. Let sit for 15 minutes, slice and serve. I’ve done it this way the last two Christmases to rave reviews.
