Mr. Adrià created an omelet reminiscent of a Spanish tortilla that comes together in minutes. 4 ounces/ 115g Potato chips. Let the chips soak for 1 minute.

Add 2 tbsp oil to a 10-inch skillet and heat over medium heat. Pour the mixture into the skillet. After the bottom of the omelet is just about set, place the pan under the broiler. cook until the top is just cooked through and the center is still slightly moist, about 2 minutes.
