I’ve slowly been transitioning to WFPB, and decided I wanted to recreate the Qdoba breakfast bowl. I am so proud of how this turned out and wanted to share!
I used some plain pre- diced frozen potatoes, cooked for about 15 minutes in a pan with just a teaspoon of olive oil (still trying to figure out how to remove all oil). Added in a can of black beans at the very end.
Also made a tofu scramble with onion.
Combined all of this with tomatoes, salsa, cilantro, and this WFPB “queso” sauce made by Primal Kitchen.
Y’all, this was way better than Qdoba, cheaper, and way healthier. I know there was a touch of oil with the potatoes and a very small amount of avocado oil in the queso, but this is pretty damn close! This is also nut-free, as my toddler is allergic to nuts.
Just wanted to share, as I love getting recipe ideas from this sub! Also open to any suggestions for improvement and/or reducing oil 🙂
