Roasted Tomato Basil Soup Ingredients [Makes 2-3 servings]
2 pints of cherry tomatoes, or your favorite blend of tomatoes.*
*Be sure to slice the tomatoes into halves or quarters if the tomatoes are large.
2 TBS olive oil
generous pinch of salt
pinch of red pepper flakes
5 garlic cloves in their paper
1c of vegetable broth
a handful of fresh basil leaves
Roasted Tomato Basil Soup Directions
1. preheat oven to 450 degrees
2. Line a rimmed baking sheet with parchment paper
3. Add tomatoes to the rimmed baking sheet, drizzle with olive oil, add salt, pepper flakes.
4. Add garlic in their papers to the baking sheet. The garlic will roast in their skins.
5. Bake for 30-40 minutes until tomatoes have cooked down and have released their juices.
6. Remove the peels from the garlic. Add the garlic back to the pan, discard the garlic paper.
7. Add tomato and garlic mixture to a blender. Add vegetable broth and basil. Pulse the soup mixture until smooth.
8. Pour soup into a small saucepan and cook over medium heat for 5-10 minutes until hot.
9. Pour soup into serving bowls and serve with grilled cheese!
