how much water?
Doesn't it get watered down when you fill it up with more water after taking out the bones? I mean, the first time it looked to me it was perfect. And it's inevitable, when you simmer something for so long (I leave it for at least 8 hours), you're bound to lose 1/3 of your water. I don't think it's a good idea just filling it up with more water, you will dilute the meat and vegetable flavor.
That is a shallot, not a purple onion. I will try it soon.

I remember growing up with a Asian family and they would make this occasionally now that’s winter is approaching I am just thinking about some. Although I never watched my friends mother make it because she would prep it early in the morning for afternoons but yeah thank you for showing us how to make the broth. Also I was wondering do you cook the noodle separate or do you out the pho in the bowl and let the broth cook it ?

I can never seem to get my broth right. All the recipes I have found use WAY more onion and WAY less ginger than you and use fish sauce instead of salt – I saw your comment below. I will give your recipe a shot tonight (doing an overnight bone simmer with knuckle and marrow bones) for the pho tomorrow. In case Anyone wants to know, the spices in the large bag are STAR ANISE, CINNAMON, FENNEL SEEDS, CLOVES, CORRIANDER SEEDS, and CARDAMON.

I stopped watching after you microwave the onion.
Blanching with boiling water doesn’t remove yucky stuff. You need to start with room temperature water ans bring it to boil. That way, all the yucky stuff will be forced out of the bone/meat.
How many gallons of water in your pot,?
