I love me some good pasta. A lovely bolognese, carbonara, etc. But sometimes I want a big hit of nostalgia and this one is it. It’s as faithful a copy as I can manage from places like the Mascot Diner, Mother’s Pizza, etc. A beefy tomato sauce ladeled over top of plain spaghetti and dusted with shaker parm and chili flakes and served with a piece of garlic toast. Good childhood memories.

    The recipe for the sauce is as basic as you can get. One pound of lean ground beef. Brown it up. One jar of classico red pepper and sausage pasta sauce. Simmer, reduce, serve. Spread for the garlic toast was margarine, garlic powder, dried parsley, paprika, salt. This is not a dish for busting out your favourite brand of San Marzano tomatoes to simmer all afternoon. This is meant to be knocked out quick in a diner kitchen to be ready for service or for mom to get the kids fed in under an hour.
